The primary objective in processing breading seafood products is to ensure food safety, stabilize breading adhesion, control product texture and yield, and extend shelf life. The entire process must revolve around three core pillars: microbial control via low temperatures, process standardization, and regulatory compliance.

Raw materials must comply with the requirements of GB 2733, Fresh and Frozen Aquatic Animal Products; sensorily, they must be free from spoilage, off-odors, and mechanical damage.

Frozen raw materials should ideally be thawed under low-temperature, high-humidity conditions (0–4°C with a relative humidity exceeding 90%). Thawing at room temperature or by soaking in still water is strictly prohibited, as these methods lead to protein denaturation, moisture loss, and rapid microbial proliferation.

Impurities—such as scales, entrails, black membranes, bloodlines, and shrimp veins—must be thoroughly removed. The product should be rinsed repeatedly to eliminate residual blood and fluids (which can cause breading detachment, excessive foaming during frying, and flavordeterioration).

The entire marination process must be conducted within a low-temperature environment of 0–4℃; marination at room temperature is strictly prohibited. When utilizing vacuum tumbling for marination, the vacuum level, rotation speed, and the alternating cycles of tumbling and resting must be precisely controlled to prevent tissue damage while ensuring uniform flavor penetration and moisture retention.

Core Process Control for Battering and Breading: This stage is critical in determining the product's appearance, adhesion, texture, and yield. Strict control must be exercised across three key dimensions: environmental conditions, recipes, and processing parameters. General requirements include: maintaining the breading workshop temperature at ≤20°C and relative humidity at ≤60% to prevent the dry breading mixture from absorbing moisture and clumping; furthermore, raw and cooked zones must be strictly physically separated to completely eliminate the risk of cross-contamination. Finished goods are stored at a stable temperature of -18°C or below, with temperature fluctuations strictly limited to within ±2°C.

Significant temperature fluctuations—which can lead to repeated freeze-thaw cycles, resulting in enlarged ice crystals, degraded meat texture, a softened coating, and microbial proliferation—are strictly prohibited.

Different Raw Material Adaptation and Quality Optimization:

  • High-Moisture Ingredients (Squid, Bombay Duck): Undergo a preliminary, moderate dehydration treatment; utilize optimized water-retention formulations, and enhance the adhesion of the base flour to prevent the breading from detaching.
  • Delicate-Textured Ingredients (Cod, Basa): Employ reduced tumbling intensity and strictly control marination times to prevent structural damage to the meat, the coating is applied in a thin, uniform layer.
  • Shell-on Ingredients (Shrimp, Crab): Ensure complete removal of surface moisture, the base flour must thoroughly fill all crevices to guarantee uniform batter adhesion, thereby preventing the shell from separating from the meat during frying.
  • End-Use Application Optimization: For deep-frying applications, the coating is optimized for crispness while minimizing oil absorption. For air fryer or oven applications, a suitable amount of oil is incorporated into the batter to enhance crispness after reheating. For microwave reheating applications, microwave-resistant modified starches are selected to prevent the coating from becoming soft or soggy.
