The taste and quality of fried food lie primarily in the details of its preparation, with coating and battering being crucial for achieving a crispy exterior and retaining juiciness. Today, we will break down the main components, functions, different coating and battering methods, frying techniques, and 17 commonly used recipes for coating and battering.
The main types of coatings for fried foods are: pre-coating powder, batter powder, and outer coating powder.
(1) Pre-coating powder: Main components include cornstarch, wheat starch, tapioca starch, protein powder, wheat flour, leavening agents, pigments, and oils. The purpose of pre-coating is to ensure better adhesion between the outer coating and the meat surface, preventing it from peeling off during frying.
(2) Batter powder: Main components include flour, starches, sugars, gums, seasonings, and leavening agents.
(3) Outer coating powder: Main components include flour, cornstarch, rice flour, milk powder, seasonings, and leavening agents.

1. Common Raw Material Classification and Functions
Based on their role in coating/baking, raw materials can be classified into the following categories:
(1) Basic Shaping Materials: These are the core raw materials for batter/powder, responsible for forming a protective coating film and locking in the moisture of the ingredients. They are the foundation of all fried products; without them, the batter cannot be formed.
Low-gluten flour: Increases the viscosity of the batter, allowing the coating to adhere to the ingredients; increases the fluffiness, resulting in a softer, crispier outer layer after frying, preventing excessive crispness and detachment.
Corn starch: The most cost-effective crisping ingredient, producing a dry, fragrant, and crispy texture after frying, and it does not easily soften after cooling; it has medium viscosity, providing a dry, crispy texture, which is the foundation of "crispyness." It can form a relatively tough protective film, locking in moisture. It does not easily soften after cooling and is the most widely used crisping starch.
Potato starch: Low gelatinization temperature, high viscosity, high transparency after gelatinization, and extremely high expansion. It can produce an extremely fluffy, light, and porous crispy structure, resulting in a crispy but not hard texture. It softens the slowest after cooling and has a golden color. It also has a higher oil absorption rate.
Cassava starch: Extremely high viscosity, transparent after gelatinization, good elasticity, and does not easily harden after cooling. Provides a chewy and bouncy texture (not hard and crisp). It has extremely strong adhesion, a firm coating, and is resistant to reheating and transportation.
Wheat starch (clear starch): Low viscosity, fine texture, pure white and semi-transparent after gelatinization. Provides a thin, crispy crust, rather than a thick, crumbly layer. Makes fried foods appear whiter or brighter in color and has a fresher taste.
Glutinous rice flour: Nearly 100% amylopectin content, extremely high viscosity, soft and sticky after gelatinization. Provides a unique texture of slightly crispy on the outside and soft and sticky on the inside. Excellent water retention, adhering tightly to ingredients to form a glutinous protective shell.
Sweet potato starch: Coarser granules, high viscosity after gelatinization, strong toughness, and a grayish color. Provides a thick, chewy, and crisp texture.
(2) Adhesive and moisture-locking agents: Prevent batter from falling off and strongly lock in moisture, ensuring the coating adheres firmly to the food. This solves the problem of batter easily falling off and becoming dry after frying for tender ingredients (fish, shrimp/tender meat) and high-moisture ingredients (fruits and vegetables). It is key to locking in moisture and maintaining shape.
Whole egg liquid/egg yolk liquid: Increases the viscosity of the batter, ensuring the coating adheres firmly to the food; enhances aroma and tenderness, making the fried food soft and tender inside and golden brown on the outside.
(3) Leavening and crisping agents: Makes the batter "leaky and porous," avoiding a dense and greasy texture.

Creating a three-dimensional crispy layer through physical structure for a lasting texture:
Breadcrumbs (white/yellow): Forms a coarse-grained crispy layer, making the fried food crispy on the outside and tender on the inside, with the longest-lasting crispness; isolates the batter from hot oil, reducing oil absorption; sets shape and is resistant to reheating during transportation.
Bread flour: Provides a fine, even, crispy layer that doesn't easily fall off, suitable for small fried items. It generates gas through a chemical reaction, creating a honeycomb structure in the batter, resulting in a crispy, crumbly texture after frying, which is the core of crispy fried items.
Double-acting baking powder: Generates gas when exposed to water and heat, providing a gentle and stable leavening effect; after frying, the batter is fluffy, soft, and flaky in layers.
Baking soda: An alkaline leavening agent that generates gas quickly and intensely; after frying, the batter is porous, hard, and crispy, and it can also slightly tenderize thick-cut meats.
Yeast powder: Provides slow leavening, making the batter softer; suitable for homemade thick-batter fried items, with a richer aroma.
(4) Seasoning and coloring agents: Enhance flavor without overpowering the main ingredient, improving the appearance of fried items. They have no structural function, only serving to season, color, and enhance aroma; the amount can be adjusted according to taste, avoiding excessive use which can cause the ingredients to release water and the batter to become thinner.
Custard powder: Gives fried items a bright, stable, and appealing golden yellow color. Custard powder produces a beautiful and uniform golden-yellow color during frying, which is faster, more stable, and more appealing than coloring through the Maillard reaction of sugars alone. It also provides a rich milky and eggy aroma, creating a signature flavor. Its main components are dairy products (milk powder, cream) and egg yolk powder, with added flavorings such as vanillin. This complex aroma masks the oily taste, enhancing the flavor profile and appeal of fried foods.
(5) Auxiliary Optimization: Used in small quantities but crucially, it solves problems such as batter clumping, food sticking to the pan, excessive oil absorption, and rapid softening, making coating smoother and resulting in better fried food texture.
Flavorless cooking oil (corn/salad oil): Makes the batter smooth and lump-free, preventing gluten development; prevents sticking to the pan/food sticking; isolates powder particles, improving crispness and reducing oil absorption.
White vinegar/lemon juice: Neutralizes the alkalinity of baking soda, preventing fried foods from becoming bitter, yellow, or black; slightly improves crispness.
Edible gum (xanthan gum/guar gum): Commercial grade, enhances the viscosity and stability of the coating; makes the coating more secure, resistant to freezing and reheating, and prevents the coating from peeling off.
The above core ingredients, with their respective adhesive, water-locking, and leavening properties, form the basic framework of the coating process. However, the proportions and combination logic of different ingredients must ultimately be implemented through specific coating methods to accurately match the taste requirements and market positioning of different fried products.
